This is one of those meals I can count on to make (mostly) everyone happy — including myself — it’s this creamy Italian Chicken Alfredo Pasta. It’s cozy, flavorful, and loaded with veggies… while still being simple enough for busy weeknights. This is one of those “dump it in the pan, stir, and pray the kids eat it” meals that somehow always turns out delicious.

You only need one pan (well, plus the pasta pot), and the steps are super straightforward. Plus, you can sneak in all those veggies without anyone judging you — or noticing. And if you prefer to make this recipe without any veggies at all, it is equally delicious!

Ingredients You’ll Need
Pasta of your choice (I used Rotini)* Diced chicken* Olive oil or butter* Zucchini* Yellow squash* Bell pepper* Italian seasoning* Salt & pepper* Heavy whipping cream* Parmesan cheese

🍳 How to Make It
Ingredients:

- 1 chicken breast, diced
- Olive oil or butter
- 1 Zucchini, diced
- 1 Yellow squash, diced
- 1 Bell pepper, diced
- 1 0.7oz packet Italian Dressing & Recipe Mix (Good Seasons brand)
- 1 cup Heavy whipping cream
- 1/4 cup – Parmesan cheese
- 8 ounces, Cooked pasta of your choice (I use Rotini)
- Salt and Pepper to taste
Directions:
- Boil pot with water, cook pasta until al dente.
- Dice chicken and veggies into 1/2-inch cube shapes.
- In small bowl, mix 1 tbsp of Italian Seasoning with chicken, save remains of packet for later.
- Heat a little olive oil or butter in a pan on medium heat, cook the diced chicken until fully cooked. Remove and set aside.
- In the same pan, add a little more olive oil or butter and toss in your raw veggies — zucchini, yellow squash, and bell pepper. Cook until they soften, about 3-5 mins.
- Pour in heavy whipping cream and stir in Parmesan cheese until it thickens into a creamy Alfredo sauce, add remaining Italian Seasoning packet.
- Add the cooked chicken back into the pan and mix well.
- Toss in your drained pasta, stir everything together, and let it simmer for a minute so the sauce coats every piece.
- Serve warm and enjoy!
